Featured Recipe:
Apple Cinnamon Oatmeal Cookies

Ingredients
3/4 cup butter, softened
1 cup packed light brown sugar
1 egg
1 tablespoon apple juice
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups quick-cooking oats
1 (10 ounce) package Hershey's cinnamon baking chips*
1 cup apple, peeled, cored and chopped

Heat oven to 350°F. Lightly grease cookie sheet. Beat butter, brown sugar, egg, apple juice and vanilla in large bowl until creamy. Stir together flour, baking powder, baking soda and salt. Add to butter mixture; beat until blended. Stir in oats. Add cinnamon chips, apple and raisins; stir until blended. Drop by teaspoons onto prepared cookie sheet. Bake 10 minutes or until edges are lightly browned. 

*I couldn't find these at my local grocery store so I substituted with about 3/4 of an 11oz bag of butterscotch chips, and then added about a tsp of cinnamon to the batter.

Farm Tip

Try making your own applesauce with seconds or drops. If you can get past their unsightly outer appearance, you'll find the inside is just as good and typically a third of the price or less. Once you've had homemade applesauce you'll never want to buy it from the store again. We choose tarter varieties such as early Mac's and Cortlands for delicious applesauce that lasts us through the winter! You can either freeze your applesauce or take it one step further and water bath the fresh sauce in mason jars for the perfect Christmas gift that everyone will love!
